• ½ tin of Piñas en Trocitos Dos Caballos
• 250 g wide rice
• 350 g condensed milk
• 400 ml coconut milk
• 400 ml evaporated milk
• 1 tbsp vanilla essence
• Ground cinnamon to taste
• Pinch of salt
• Sugar to taste
1.- Soak the rice for 15 minutes and then strain it.
2.- Put the pineapples in a blender, process until it turns into juice.
3.- In a cooking pot, add coconut milk, pineapple juice and salt to taste. Warm on high heat for 5 minutes.
4. Add rice and cook on high heat for 35 minutes, stirring every 5 minutes. Add sugar to taste. (optional)
5.- Finally, add evaporated milk, condensed milk and vanilla essence and cook on low heat for 10 more minutes, constantly stirring.
